WINEMAKING
All the grapes destined for this wine was hand-harvested between mid-March and early April. Upon arrival at the winery, they undergo an optical selection process and a cold prefermentative maceration for 3 to 4 days. The grapes of each variety are fermented separately in small stainless steel tanks and French oak barrels at temperatures between 23 and 25°C. Selected and native yeasts are used, particularly with Petite Sirah and Petit Verdot. To avoid extracting an excess of tannins in these inherently tannic varieties, few pump-overs are performed.
Once fermentation is completed, the wine is pressed and racked to French (70%) and American (30%) barrels, where it matures for 14 months and undergoes malolactic fermentation. After determining the final blend, the wine is bottled and rests for a few months before being released for sale. Only 10% of the barrels are new, while the rest have two or even three uses.
TASTING NOTES
Color: Deep ruby-red with violet hues.
Aroma: Delicate, clean, attractive, juicy, with aromas of ripe and sweet fruits, blueberries, with an elegant touch of rosemary and cedar.
Taste: A juicy, fresh, and tasty wine of vivid acidity and well- structured. Its abundant and soft tannins feel round on the palate.
Aging Potential: More than five years
T°: Serve at 16° – 18° C.
