Harvested fully ripe and entirely healthy.95% destemmed fruit, fermented in stainless steel fermenter with a combination of punchdown and pump over.Aged in 2nd and 3rd year Francois Freres barriques of 225 l.
TASING NOTES
Displays bright Pinot nose of red berries and tart cherries, very little perceptible oak, silky tannin, bright acidity.This is an elegant,”old world” style of Pinot Noir: completely dry-but with true varietal character and bright fruit characteristics so typical of this grape.
PARING
A fine companion for light roasts and chops, excellent with venison and wild fowl, very good with roast salmon as well as hard cheeses.
