GRAPE VARIETY:Pinot Noir 75%, Chardonnay 15%, Pinot Meunier 10%
TASTING NOTES
Vermilion gold in color. Nose of freshly pressed black grapes, of red, white and citrus fruits. Ample palate with flesh of vineyard peach and bouquet of aromatic herbs. Small spicy notes in the finish. A fine, tightly knit Champagne of great purity.
WINE-MAKING
Only Cuvées are used (1st pressing) on a membrane press (low pressure).From the press to the tanks without pumping (gravity). Natural decantation.Temperature control led: 18° C 14 days of fermentation. Racking and malolactic fermentation straight away at a temperature of 18°C. Fining at a low temperature in the winter (5°C to 8°C). Blending.Frost treatment and filtering. Two to three years on the lies at cellar temperature (11° C). The wine rests a minimum of four months after disgorging before shipment.
FOOD MATCH
Ideal as an aperitif. At the table it goes with white meats, rolled fish fillets,Chaource cheese. Serve at 7°C.
